RASBERRY OATMEAL BARS

This is a great summer treat and good for picnics! Also, a great breakfast on the go. You can use other jams other than the rasberry too. Add 1/2 nuts to the batter for extra protein if you’d like.

1 1/4 cups wheat flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp light brown sugar
1/2 cup unsalted butter (1 stick),softened
1 large egg
1 tsp pure vanilla extract
1/2 tsp almond extract
2 cups old-fashioned rolled oats, divided
1 cup rasberry jam

1. Preheat oven to 350 F. Coat a square baking dish with cooking spray. 9 inch is good.
2. Sift flour, cinnamon, baking soda, and salt in a bowl.
3. Cream sugar and butter until light and fluffy. Beat in egg and vanilla and almond extracts until smooth. Add flour mixture and mix until combined. Stir 1 3/4 oats. Spread 2/3 of batter with a spoon into the baking dish. Spread rasberry jam over the batter with the back of spoon.
4. Add remaining 1/4 cup of oats to remaining batter. Crumble over of rasberry jam. Bake 30 minutes or until golden. Cool and cut into bars. Enjoy!
